Bexa Body Fitness, Owner & Personal Trainer

Rebecca Black is one of the leading health and fitness experts in the Midwest.  Rebecca has an amazing story of self-transformation, where she went from 30 pounds overweight to placing in fitness competitions.   In January 2012, Rebecca was diagnosed with celiac disease and it completely changed her life. With her blog “Pretty Little Celiac.”, Rebecca is sharing her life story of struggles associated with 17 years of undiagnosed celiac disease.

Rebecca is an accredited Certified Personal Trainer from the American College of Sports Medicine (ASCM). Rebecca earned a Bachelor’s degree in Psychology from Ohio Wesleyan University and a Masters in Non-Profit Management from Regis University.Rebecca opened the doors to Bexa Body Fitness in January 2012, which culminated her vision of creating a fitness studio that was personal and customized training studio offering premium services to all fitness levels.

 
Lara Field

Board certified specialist in pediatric nutrition (CSP)

In 2008, Lara Field founded FEED, a nutrition 
counseling practice.

Field has always had a passion for kids’ nutrition. She has over a decade of experience in clinical practice at two of the top ranked pediatric hospitals in the country, Lurie Children’s Hospital of Chicago (formerly Children’s Memorial Hospital) and University of Chicago Comer Children’s Hospital. She has specialized in pediatric nutritional care including the pediatric intensive care unit and pediatric gastroenterology and hepatology clinics.

As a board certified as a specialist in pediatric nutrition (CSP), Field has extensive food allergy training and has completed the requirements of the Food Allergy & Intolerance Management Registered Dietitian Consultant Training Program.

Field has been invited to speak at numerous national nutrition and medical conferences including the American Society of Parenteral and Enteral Nutrition (ASPEN) and the Crohn’s and Colitis Foundation of America (CCFA). She has been quoted in national publications on her perspective on infant feeding practices, food allergies, celiac disease, and various other health topics.

Field is the pediatric nutrition advisor for the University of Chicago Celiac Disease Center. She frequently educates patients, family members, and nutrition professionals on the gluten-free diet. Field proudly serves as a member of the Academy of Nutrition and Dietetics and is a member of Dietetic Practice Groups including Nutrition Entrepreneurs, Pediatrics, and Medical Nutritional Therapy. Lara is also very active locally with the Chicago Dietetic Association and the Chicago Food and Nutrition Network.

Field received her Bachelor of Science Degree from the University of Illinois at Urbana-Champaign. She completed her Master’s of Science degree and dietetic internship from Rush University Medical Center in Chicago, Illinois. During her internship, Field completed additional specialized pediatric training at the Lurie Children’s Hospital of Chicago and John’s Hopkins in Baltimore.

Field currently lives in Chicago with her husband, and their two sons. Her personal passion includes running – she has completed three marathons, including the Chicago Marathon in 2006 and 2009, and Boston Marathon in 2007. She also loves cooking for her family and testing out new recipes.


Chef Jean-René Renusson

Chef Jean-René Renusson literally grew up in the kitchen, even taking his first steps in the kitchen of the Ritz Carlton in Chicago.  His father, world renowned pastry chef, Gilles Renusson had been head pastry 
chef there.  It wasn’t long before Jean-René was off 
to Austria to apprentice at a pastry shop and then to 
a patisserie in Grand Rapids.  You could say culinary arts is in his blood. He has since worked at the 
Amway Grand Plaza Hotel in Grand Rapids, and is 
now working for Savory Foods as a gluten-free and vegan chef. As a vegan, he has submerged himself 
in perfecting recipes that not only taste 
mouth-watering, but also are gluten-free and some vegan as well. 


Rohanna Doylida

Rohanna Doylida began her education in coping with gluten intolerance when her son Ben was diagnosed with Celiac Disease ten years ago. She is CEO of The Gluten-Free Consultant LLC, Vice-Chairperson of the Advisory Board of the University of Chicago Celiac Disease Center and the former head of Roh & Jo's Gluten-Free Sweets baking company.








Dr. Andrea Noey

Dr. Andrea Noey is passionate about inspiring and empowering people to be self-sufficient in the area of health. She believes that everyone has a purpose on this earth. Hers is to be an advocate for health and healing. Dr. Noey obtained dual Bachelor's Degrees in Kinesiology (from Occidental College in Los Angeles, CA) and Human Biology (from National University of Health Sciences in Lombard, IL). She achieved the Doctorate of Chiropractic degree from National University of Health Sciences in 2001 with an emphasis in Nutrition. After graduation, she trained with several colon therapists, learning both open and closed colonic systems. She received and maintains colon therapy certification through I-ACT.  Dr. Noey has been in private practice for 10 years.

Eve Becker
Gluten-Free Nosh, creator. 

Eve Becker is the creator of the Gluten-Free Nosh blog, www.glutenfreenosh.com, and a frequent contributing writer to Living Without, a magazine for people with food allergies and sensitivities. She also was the managing editor of Tribune Media Services, a newspaper syndication company. Eve lives in Chicago with her husband and two daughters, the youngest of whom has celiac disease. As such, she is intimately familiar with navigating home, school, playdates and parties gluten-free.  In her presentation, Gluten-Free Kitchen Confidential, she shares top tips for maintaining a gluten-free kitchen, preventing cross-contamination at home and away, baking with gluten-free flours, and dining out safely.

The Celiac Awareness Tour promotes celiac disease awareness and gluten-free food and beverage products.


Each stop on the Celiac Awareness Tour features presentations by celiac disease experts, chef demonstrations and dozens of gluten-free food and beverage exhibits from local and national gluten-free food and beverage manufacturers.


In 2012 over 100 gluten-free manufacturers exhibited and thousands of shoppers attended the events in cities throughout the Midwest, including Detroit, Chicago, Philadelphia, Indianapolis, Pittsburgh, Cincinnati, Columbus, and Louisville.
